Vineyards: 10 year old vines growing on koffieklip and Clovelly soils.
Winemaking
The grapes where cold soaked for 3 days before fermentation commenced. This lasted 15-20 days. Fermentation and malolactic fermentation were completed in new, 2nd and 3rd fill French oak barrels. After Malolactic fermentation the wine was racked and barrel matured in 2nd, 3rd fill French oak for 16 months.
Ageing
Already very enjoyable, but will easily keep for 8 – 10 years.
Corné Says
This wine has an intense colour with a complex nose of ripe fruit and spice that is layered with hints of dark chocolate and liquorice. All these flavours carry to the palate where the wine shows an unbelievable balance between tannin, fruit and oak. The wine is soft, full and rounded with the taste of pure fruit which carries to the end of this lengthy palate.
